Good Morning Granola ~ Recipe


We enjoy our granola in the morning (or any time really). It's a nice healthy food, but buying it in the store is expensive and what are all of those crazy sounding ingredients listed on the back?? All the way around, it just worked better for us to make our own, it's so much more cost effective and in the long run way healthier too.

This morning at the breakfast table, I realized I'd been meaning to write a blog post about my granola recipe. So grabbing my camera and temporarily hijacking my mom's breakfast. 

The beauty of granola is you really can't mess it up too badly, unless you burn it too a crisp. I rarely use exact measurements, relying mostly on guesstimations and "eye balling it." So far, I haven't had any failures with granola... Yet. 

Pre-heat oven to 200˚

In a large mixing bowl, add:
4 Cups uncooked oats
3/4 Cup Walnuts, Chopped
3/4 Cup Almonds, sliced (or chopped)
1 Cup Unsweetened Coconut flakes (Optional)

In a saucepan mix over a low heat until everything is melted and well mixed:
1/2 cup Coconut oil
3 TBLS Water
2 TBLS Maple Syrup (Honey would also work)
2 TBLS Brown Sugar
1 TBLS Cinnamon
2 tsp Nutmeg

Once the ingredients in the saucepan are melted into a nice even syrup consistency, pour it over the dry ingredients in the bowl. Stir until everything has a light coating of the syrup.  Spread granola evenly over greased cookie sheets and bake for 7 minutes.  

Remove from oven and let stand until completely cool, then move to an airtight container or bag. 

Add toppings to suit your taste and enjoy!!
